We didn't want three venues. We wanted one room that knew what time it was.
NOIR HOUSE opens quietly. Before eight, it's little more than the sound of the grinder and low conversation — regulars at the counter, a paper folded beside a flat white. By midday the room has turned over: tables set for something slower, plates built around what the market gave us that morning.
When the sun drops, so does the lighting. Candles come out, the playlist changes register, and the same room that poured your espresso now pours something with bitters in it. We don't think of this as three businesses sharing a space — it's one house, keeping time.
